This meal prep is SO simple and yet it’s already become a new favorite. It’s only a few ingredients and it’s so flavorful, quick, and, because it’s all done in one sheet pan, there are barely any dishes to do! Pair it with a pre-made salad kit and you’ve got a whole meal that can be made and cleaned up in an hour. Is there anything better??
You might’ve noticed that I’ve been on a pre-made salad kick lately. They’re just so convenient and full of so many fun flavors! I’ve been focusing on making sure I’m eating more veggies and this is a quick, easy way to do it. Most grocery stores now have these – it’s a package with all the veg and salad toppings you need along with a little packet of salad dressing that pairs perfectly. You could totally make your own, but sometimes a shortcut is nice too. Whatever you prefer!
This meal, like most of the ones I share, can be completely customized! There are a few elements to keep in mind:
- the veg – I used shallots and apples as my veg (or fruit and veg, as it were). You could switch it up though! I’ve previously done something similar, although not a sheetpan meal, with butternut squash and apples. You could also do some potatoes, bell peppers, and onion which would be delicious. Whatever you use, keep your cooking times in mind. Start with whatever takes the longest to cook and slowly add the other elements, finishing with the one that cooks the quickest
- the herbs – use whatever herbs you have, or whatever is going to taste good with whatever veg you’re using! I was going to use rosemary but they didn’t have any when I was at the store, but it’s an easy substitution and you really can’t go wrong
- the sausage – I used Italian chicken sausage but there are SO many flavors out there. If you’re using sausage that hasn’t been precooked be sure to give it enough time to fully cook. Non-precooked sausage will also add another layer of flavor so I highly suggest it
- the acid – after baking for so long, this meal needs a hit of acid to brighten it back up right at the end. I used apple cider vinegar, but you could also use lemon juice! play around with it

Sausage, Apples, and Onions Sheet Pan Meal
makes 5 servings
Ingredients
- 2 large or 3 medium apples, ideally one tart and one sweet
- 5-6 large shallots
- 2 tbsp olive oil
- 1/2 tsp salt
- pepper to taste
- 1-2 tsp mustard
- 2-3 sprigs thyme and sage
- 5-6 Italian chicken sausages
- 2tsp apple cider vinegar
- salad, for serving
- bread, for serving
How to do it
- prep: preheat the oven to 425*. core the apples and cut them into roughly 1/2″ pieces. Remove the skin and ends from the shallots and cut them into quarters.
- start the veg: place the apples and shallots onto a large sheet pan. top with the olive oil, salt, and pepper and toss to coat. bake in the preheated oven for 10-15 minutes or until the shallots are starting to caramelize
- add the herbs and sausage: after 10-15 minutes, add the herbs, mustard, and sausages to the sheet pan. use a knife to poke a couple of holes in each sausage and toss everything together. return the pan to the oven and cook for 20-25 minutes until the sausage is cooked through, the shallots are caramelized, and the apples are soft
- finish it off: drizzle the apple cider vinegar on top and toss to combine
- enjoy: if eating immediately, allow to cool slightly before transferring to a serving dish. serve alongside a salad and bread for a delicious dinner! if using for meal prep, allow to cool completely before transferring to an airtight container. reheat in the microwave or oven when ready to eat alongside a salad and bread, if using.
