I’ll be honest, as much as I love this recipe I was a bit nervous to post it because people have some STRONG opinions on pound cake and I don’t need to get involved in that! So, my way around it: I’m referring to this as a loaf cake, not a pound cake. However, whatever you may want to call this, it’s pretty darn good.
THE RECIPE
- the cake – this one is pretty easy to make and so tasty! it’s pretty basic with only a few ingredients, so it’s definitely the time to break out the good vanilla and butter, if you’ve got it!
- the mix-ins – chocolate chips are my mix-in of choice here. it’s simple, yet so delicious!
substitution ideas: the sky is the limit! whatever you use though, be sure it’s not going to add a bunch of liquid to the cake (so fruits may be hard to add here)
pro tip: dust your mix-ins with a bit of flour so that they don’t all sink to the bottom!

Chocolate Chip Loaf Cake
I'll be honest, as much as I love this recipe I was a bit nervous to post it because people have some STRONG opinions on pound cake and I don't need to get involved in that! So, my way around it: I'm referring to this as a loaf cake, not a pound cake. However, whatever you may want to call this, it's pretty darn good and so easy to make!
Ingredients
- 170 g (1 1/2 sticks) butter, softened
- 150 g sugar
- 225 g flour
- 1/4 tsp salt
- 2 tsp baking powder
- 2 eggs
- 160 mL milk
- 2 tsp vanilla
- 200 g chocolate
Instructions
- prep: preheat the oven to 350*. line a loaf pan with parchment paper and spray with nonstick spray. set aside
- make the batter: combine the flour, salt, and baking powder in a medium bowl. in a small bowl, combine the milk and vanilla
- in the bowl of a stand mixer, cream together the butter and sugar at medium high speed until light and fluffy, about 5 minutes. stop halfway through to scrape down the bowl
- add the eggs, one at a time. alternate adding the dry and wet ingredients, starting and ending with the dry, until everythign is just combined (ie. add 1/3 of the dry mixture and mix until just combined. add 1/2 of the wet ingredients and combine, add 1/3 of the dry ingredients, then add the remaining wet ingredients, and end with the rest of the dry ingredients)
- fold in the chocolate chips and transfer the batter to your prepared loaf pan
- bake: bake in the preheated oven for 60-70 minutes or until a skewer inserted into the center of the cake comes out without any liquid batter on it. Be careful not to overbake or you'll have a dry cake!
- cool and enjoy: let the cake cool and slice and enjoy!
