9.21.20 Meal Prep Monday: Rosemary Lemon Chicken with Sweet Potatoes

This might be my all time favorite meal prep because of these sweet potatoes. Y’all, I could talk about these sweet potatoes FOREVER, they’re that good. I adore sweet potatoes, and I love cinnamon, and I’ve typically only ever used cinnamon in sweet dishes, but I know that there are a lot of cuisines that use it in more savory applications, so I threw some (okay, a lot) on my sweet potatoes before roasting them and it’s so good. My apartment smelled like the most fall like place on the planet, and the potatoes are delicious. Which isn’t to say that the rest of the meal wasn’t! It’s all great, but I want to eat these sweet potatoes forever.

Let’s take a closer look at these components:

  • Lemon Rosemary Chicken

    my go-to when I don’t have a ton of time for meal prep is to mix up a quick chicken marinade, let it sit for 15-20 mins, then cook it up in a skillet with some oil and butter. This time I used: a large sprig of rosemary, the juice from 1 lemon, 3 large cloves of garlic, finely minced, lots of salt, pepper, a bit of olive oil
  • Cinnamon Sweet Potatoes

    obviously my fav part, and so simple! cut up your potatoes into whatever sized pieces make you happy (mine are wedges), drizzle on some olive oil, sea salt, and a heavy sprinkling of cinnamon, mix to coat. Roast at 425* for ~30 mins, depending on the size of your pieces, flipping halfway through. YUM. let fully cool on the sheet pan before putting in a container so they don’t become soggy and sad
  • Roasted Broccoli

    always delicious! cut up your florets, drizzle with olive oil and some salt, and pop in the oven with the potatoes for the last 15 mins of their cooking time. everything is done at the same time!
