9.11.20 Apple Cinnamon Muffins

Hello friends! It’s time for one of my fav things I’ve made recently – Apple Cinnamon Muffins! I’ve been on a real muffin kick lately, and these are so good, especially since I’m hoping if I bake fall-like foods, the fall weather will arrive. I can hope!

I used my typical muffin recipe, it’s so moist and delicious, but added some new spices – cinnamon, nutmeg – and some oats into the topping for that little something extra. I used granny smith apples for this, but you can use pretty much any apple you’d like. These are great for a quick part of a weekday breakfast, or a delicious weekend treat! They’re impressive and delicious, but not a lot of effort. My favorite combination! These also freeze beautifully, so you can always have some on hand.

Apple Cinnamon Muffins – makes 12

Ingredients

for the muffins

  • 250 g AP flour
  • 150 g sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 egg
  • 1 tsp vanilla
  • 60 mL veg oil
  • 250 g greek yogurt
  • 2 Tbsp milk
  • 2 small apples, chopped into small cubes

for the topping

  • 2/3 C flour
  • 1/3 C oats
  • 3 Tbsp brown sugar
  • 2 Tbsp sugar
  • 1/2 tsp baking powder
  • pinch salt
  • 6 Tbsp butter, melted

How to do it

  1. preheat the oven to 425* and prep your muffin tin by spraying it with cooking spray or coating with melted butter. you can use liners if you’d like! set aside
  2. make the topping: combine all topping ingredients in a small bowl. set aside
  3. make the muffins: in a medium bowl, combine the AP flour, sugar, baking powder, salt, cinnamon, and nutmeg. mix well and set aside
  4. in the bowl of a mixer or a large bowl, combine the egg, vanilla, oil, greek yogurt, and milk. once combined, add in the dry ingredients and mix at low speed until just combined
  5. gently fold in the cubed apples
  6. assemble and bake: divide the batter into the prepared muffin tin, then top with the crumble topping
  7. cook in the preheated oven for 5 minutes, then lower then temperature to 350* and bake for an additional 13-15 minutes until golden brown and a skewer/toothpick comes out clean
  8. let cool and enjoy!
