Hello friends! It’s time for one of my fav things I’ve made recently – Apple Cinnamon Muffins! I’ve been on a real muffin kick lately, and these are so good, especially since I’m hoping if I bake fall-like foods, the fall weather will arrive. I can hope!
I used my typical muffin recipe, it’s so moist and delicious, but added some new spices – cinnamon, nutmeg – and some oats into the topping for that little something extra. I used granny smith apples for this, but you can use pretty much any apple you’d like. These are great for a quick part of a weekday breakfast, or a delicious weekend treat! They’re impressive and delicious, but not a lot of effort. My favorite combination! These also freeze beautifully, so you can always have some on hand.
Apple Cinnamon Muffins – makes 12
Ingredients
for the muffins
- 250 g AP flour
- 150 g sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 egg
- 1 tsp vanilla
- 60 mL veg oil
- 250 g greek yogurt
- 2 Tbsp milk
- 2 small apples, chopped into small cubes
for the topping
- 2/3 C flour
- 1/3 C oats
- 3 Tbsp brown sugar
- 2 Tbsp sugar
- 1/2 tsp baking powder
- pinch salt
- 6 Tbsp butter, melted
How to do it
- preheat the oven to 425* and prep your muffin tin by spraying it with cooking spray or coating with melted butter. you can use liners if you’d like! set aside
- make the topping: combine all topping ingredients in a small bowl. set aside
- make the muffins: in a medium bowl, combine the AP flour, sugar, baking powder, salt, cinnamon, and nutmeg. mix well and set aside
- in the bowl of a mixer or a large bowl, combine the egg, vanilla, oil, greek yogurt, and milk. once combined, add in the dry ingredients and mix at low speed until just combined
- gently fold in the cubed apples
- assemble and bake: divide the batter into the prepared muffin tin, then top with the crumble topping
- cook in the preheated oven for 5 minutes, then lower then temperature to 350* and bake for an additional 13-15 minutes until golden brown and a skewer/toothpick comes out clean
- let cool and enjoy!
