Happy Monday, friends! I hope you’ve all had a great start to your week! I’m not going to lie – I did NOT feel like meal prepping yesterday. Not even a tiny bit. However, I’ve got a crazy week and having food ready to go is going to make my life so much easier, so I kept it simple and powered through.
Sometimes I made everything from scratch, but this prep is not one of those times! Either is totally acceptable, honestly. You do you, friends. Here’s all the details:
- Sweet and sour chicken – I used the same method as my sesame chicken recipe, but instead of the sesame sauce I used store bought sweet and sour sauce. so simple!
- Roasted veg – I happened to have a head of broccoli, a red bell pepper, and a zucchini in my fridge, so that’s what I used! chopped pretty small, tossed in oil, salt, and pepper, then roasted for 15-20 mins @ 425*
- Quinoa – bc what else would I have with my meal prep??
I ate the first one today and it’s so good! Definitely glad I made it happen on Sunday.
